Vegan Breakfast Quinoa

I know that this isn’t really the theme of the blog here, but I was inspired. And one shouldn’t turn down inspiration, now should they? I have an interview coming up on the site tomorrow with the fabulous Melissa Costello (who was the chef for P90X creator Tony Horton, so she knows how to help you get healthy for the wedding!), and her book inspired a little recipe of my very own!


Vegan Breakfast Quinoa (who said you couldn’t have sweet quinoa?!?)

1 cup water
1 tsp coconut oil
1/2 cup quinoa, uncooked
1 1/2 tbsp maple sugar (or maple syrup, if you prefer a healthier option)
1/2 tsp cinnamon
2 tbsp goji berries

Bring water and coconut oil to a boil. Add quinoa, stir and cover, leaving the quinoa to cook for about 15 minutes. Once three quarters (3/4) of the water has been absorbed, add the sugar/syrup and cinnamon (if you want your goji berries to plump up, add them now. Otherwise, add them at the very end.), put the cover back on and let the quinoa finish cooking (about 5-7 more minutes).

Serve and enjoy! You can also try this with mixed berries – it’s like quinoa cobbler!
