Get ready for an extra special treat – this is my father’s recipe, slightly tweaked to make it a little healthier (and easier to make in terms of what’s available near me).
1lb meat, mixed (my father uses sausages and beef, I use turkey – specifically the Jennie-O Italian Turkey – and beef)
1/2 medium Chopped Onion
2 cloves Minced Garlic
1/3rd cup Romano cheese
Mix all ingredients together in a large bowl. There’s nothing really scientific here, and if you don’t use the exact quantities, don’t worry – you won’t mess these up. I mean it – you CAN’T mess these up. They’re magical.
Bake at 400° on a cookie sheet for about 15 mins each side, less if the meatballs are smaller. They should get a bit of a crust on them from the cookie sheet (and don’t spray that sucker down with Pam or anything. There’s enough fat in the meatballs to keep them from sticking too much).
Once you’re done with both sides, toss them into your sauce. One of these days, I’ll share my not-so-secret sauce recipe. The trick? Great WHOLE tomatoes. And check out the crusty goodness on those meatballs below!
Serve them with pasta and grated cheese on top. Enjoy!
